To change the standard, you must first masterful them

We must not imagine that Organic Olive growing is a fast farming

 

The olive trees were chosen and planted according to a precise plan intended to allow the wind polinization

 

The trees are pruned every year or every three years according to their age and growth, with the goal that the size promotes the strength of the tree and the maturity of its fruits

 

The soils are respected and subscribed naturally: one or two plowing of surface (harrowing) perpendicular to the axis of the slope makes it possible to bury the weeds in the soil as well as the products of size

 

Organic additions are added (sheep manure, bull clogs)

 

Our oil is produced mainly from the indigenous variety of olives "Zorzaleña" or "Lechin de Sevilla" which gives our oil its strength and bitterness

 

These Olives arrived in Andalusia 3000 years ago with the Phoenician sailors and have prospered there

 

But BrandMano is an assemblage that integrates other varieties that can temper and modulate the original flavor: sweetness is provided by the Arbequina variety and acidity by the Marteña variety

 

These two varieties are present on our farm and happily coexist with Zorzaleña
